Vegetarian Bibimbab

This Vegetarian Bibimbab, simple salads over rice is easy and light yet satisfying. It is a great meal for dinner.

Bibimbab is one of popular korean dishes. "Bibim" means mixed and "Bab" means rice. So literary "Bibimbab" means mixed rice. Traditional korean bibimbab can be made of some marinated meat and different marinated/cooked vegetables along with fried egg over rice with sesame oil, sesame seeds and sauce to mix together to eat. Cooking all ingredients can be daunting but very flavorful when all are mixed together. All different textures and flavors from different ingredients being cooking differently provide every bite an unique experience.

There are many ways you can enjoy bibimbab. If you have ever visited traditional korean restaurants, you'd have noticed that lots of small vegetable dishes accompanying. It is because a traditional korean meal consists of rice, soup, main dish and small side dishes by default. That's why almost all of Koreans have loads of prepared side dishes in their fridge. That's how bibimbab can be an easy quick fix meal at home in Korean because you can literary add whatever you have in your fridge and mix them with rice and sauce to eat. That's how it can have different kinds of bibimbab.

You might have seen in Korean Drama, where there are scenes of a character take out loads of side dishes in containers and start adding them in a big bowl with rice and add sauces and mix to eat by him/herself or a family or a group of friends around the table. It's a comfort food if you eat that way because you can enjoy all of your mom's touches and flavors in a bowl. And it can be a bonding experience if you eat with a group because you won't share that comfort dish in a bowl with an stranger.

For my quick and wind down dinner, I often have this vegetarian bibimbab for dinner because it's so simple, healthy, light yet satisfying. It's a great way to eat salad, too. My kids eat this bowl of salad over rice happily. You can vary your Bibimbab with your favorite vegetables either cooked or fresh and with either spicy or non spicy depending on your taste.

Ingredients

  • 1-1/2 -2 cup brown rice or mixed rice
  • 4 eggs
  • 2 avocados
  • 10 oz salad of your choice
  • 4-6 tbsps Gochujang sauce (or soy sauce if you prefer)
  • 4 tbsps sesame oil
  • 4 tsps sesame seeds

Instructions

  1. Wash and rinse rice 2-3 times. Add water up to your middle of middle finger when you put your hand flat on top of the clean rice. On high heat cook until rice pot starts boiling, then turn to low heat and leave for 20-30mins. When it's cooked, divide it into 4 bowls.
  2. Wash and dry salad and add into those bowls.
  3. Cut avocados in 1/2" cubes and add into those bowls.
  4. Fry eggs your favorite way and add each into those bowls.
  5. Add 1 tbsp or more Gochujang(or soy sauce) and 1 tbsp sesame oil and 1 tsp each to those bowls.

I normally mix half sweet brown rice and half normal brown rice to have some stickiness.
