Chicken Tacos
This basic and simple chicken tacos are great for summer lunch.
I love Mexican food. It has lots of ingredients that I like. Avocados, peppers, jalapeños, corns, beans, tortillas and more. The flavor combined by all these ingredients gives me mouthful of joy.
Tacos are great for summer because they are served in room temperature and taste great. Perhaps, that's why they are one of the best casual party food because they are easy to serve. Guests can assemble their own tacos and pop them right in their mouth. Tacos can create a good flow during the party. Guests can eat tacos on their feet while hanging around and mingling with other people. Tacos are easy and fun to make and eat! It feels like crafting rather than cooking. That's one of the reasons why I crave them all year around. They can be easily varied simply by adding different sauces of your choice.
Chicken Tacos
Ingredients
- Chicken
- 1-1/2lb (700g) chicken thighs cut into 1/2" strips
- 1 medium onion cut into 1/2" strips
- 1 red pepper cut into 1/2" strips
- 1/2 green pepper cut into 1/2" strips
- taco mix or smoked or picante paprika, garlic powder and ground cumin
- 2 tbsps oil for cooking
- 1 avocado: slice to 10 pieces
- sour cream
- corn or flour taco tortilla 10-12 pieces
- salt and pepper to taste
- jalapeños in a jar (optional)
- chopped spring onion (optional)
Instructions
- Chicken
- In a frying pan in medium heat, add oil, chicken and onion fry for 2 mins, add salt and pepper to season.
- When onion become caramelized and chicken become brown about 5 mins, add peppers and taco mix.
- Taste cooked meat, add more season if desire.
- The tacos
- Warm tortillas.
- Divide prepared chicken, avocado slice, sour cream, jalapeños and chopped spring onion equally to warmed tortillas and assemble.
- Add your favorite sauce to eat together.
